Who doesn’t love a homemade Carrot Cake? This recipe, a family favorite for many decades, is a simple cake with carrots, a touch of cinnamon, and that’s it. Topped with everyone’s favorite Cream Cheese and Pecan Frosting, it won’t last. But should you have leftovers, it is a freezer friendly cake.
